We’ve baked a lot of soft keto cookies since Matt is a huge fan of soft batch cookies. While I prefer a crisp shortbread cookie over a soft ginger biscuit, these keto ginger cookies are delicious. Try these soft batch cookies if you like soft batch cookies:

The Keto Cookie Recipe That Makes Soft Keto Cookies!
The mix of almond and coconut flour is the key to these exceptionally soft cookies. We always use blanched finely ground Anthonys brand almond flour and Anthonys brand coconut flour in our cookies, and they’ve never failed us.
When you use both, you won’t end up with a thick crumbly cookie like you would with only coconut flour or a crumbly, fall apart cookie like you would with just almond flour. You get a wonderfully moist baked product by combining both flours, typically in a 1 to 4 ratio of almond and coconut flour.
For ginger cookies, what type of molasses do you use?
While there are three kinds of molasses that may be used in baking, blackstrap molasses is the most frequently used, which is what we used in these soft ginger cookies! It isn’t essential to use it, but if you want that unique brown sugar taste with a hint of sweetness and bitterness, you won’t want to bake these cookies without it.

Carbohydrates in Molasses
You may have the same reservations I had when I first tried this dish. How can molasses be keto friendly when it’s 100 percent sugar/carbs with no other nutrients? To be sure, you don’t need much to go very far. We just use 1 tbsp, which is 14 grams of total and net carbohydrates.
Still seems like a lot, doesn’t it? When you split that by 14, you get just 1 carb per cookie, with all of that strong brown sugar taste we mentioned before. It’s a foregone conclusion. Yes, you can be keto and eat molasses!

I haven’t done my job if your mouth isn’t already watering. The only thing left to say is that these extremely soft, moist cookies will make an excellent after-dinner dessert when paired with our favorite low-carb ice cream! Make some ice cream sandwich cookies or crumble some crumbled keto bars (our fave keto bar on the market!) on top of your ice cream. We guarantee that you will not be dissatisfied!

Preheat the oven to 350 degrees Fahrenheit and prepare two rimmed baking sheets with parchment or silicone liners.
Whisk together the almond flour, coconut flour, ginger, cinnamon, baking soda, and salt in a medium mixing basin.
Combine the butter and erythritol in a large mixing bowl and beat until smooth. In a separate bowl, whisk together the egg, molasses, vanilla, and stevia until thoroughly mixed.
Continue to whisk in the almond flour mixture until the dough comes together.
Chill the dough for 10 minutes before rolling it into 1 inch balls and placing them a few inches apart on the prepared baking sheet. Flatten each cookie slightly with your finger tips to make thick discs.
Bake for 8-12 minutes, or until the top is cracked and set (they will also smell delicious).
Remove the pan from the oven and set it aside to cool fully. Repeat with the remaining cookies on a platter or in an airtight container.
Note that they will be extremely soft, so do not touch them until they have completely cooled. They will get firmer the longer they sit out!
